After buying the Deliciously Ella recipe book and searching her blog I decided to make some of her Oat Cookies. Unfortunately the Oat cookie recipe wasn’t featured in her book but it’s on her blog where everything is. Here is the recipe I followed to make the Healthy oat chocolate cookies.
All you need to make 10-12 cookies
Coconut Oil 2 Tablespoons
Raw Cocoa Powder 2 Tablespoons
Oats 1 and a half cups
Maple Syrup Half a cup
Black Beans 2 cups
Cocoa Nibs Handful(optional)
I decide to not make so many so I halved all the ingredients to make 5-6 cookies. I preheated the open to 200 dregrees. I used a Nutribullet as my food processor as I don’t actually have one. I will be getting one in the future and more and more recipes require one. There is a new ingredients here I haven’t worked with before and that’s black beans. It took me a while to track them down in a supermarket as a lot near me don’t sell them for some reason. The black beans aren’t that appetizing and they also come in a purple liquid so they need to be drained and washed quite a bit. I placed the coconut oil, maple syrup, black beans and cocoa powder into the processor. I blended until everything was smooth with took under a minute. The first thing I noticed was how nice the mixture smelt. It was a strong rich chocolate smell and I had to stop myself trying some.
I placed the plain oats in a mixing bowl and added the chocolate mixture. I then stirred it all together until it was all mixed and then started to create balls with the mixture and then I flattened them on a baking tray. They took around 20 minutes in the oven and they went hard and a bit browner.
There’s a couple of things I did wrong because I cut the recipe ingredients in half I thought I would add more oats than I needed and this caused the cookies to be overloaded with oats. The cookies would of tasted a bit better with less oats and possibly a touch more maple syrup and cocoa powder as they go really well together. This is a trial and error recipe as you can add other ingredients that suits you. I love trying these recipes as all the ingredients are natural and there’s no added sugar.
I would make these again but possibly follow the full recipe instead of halving it.
